The greatest freaking thing happened on December 8th – I went shopping. And not only did I go shopping, I noticed that my favorite, lovable little banana-loving minions had a movie out on DVD. That’s right, Minions © 2015 Universal Studios . All rights reserved – (duh) was fresh out in stores to take home for myviewing enjoyment. Since I live in the boondocks, that means it’s also available in stores near you. It’s easy to find out who sells it when you follow this link to the pot of golden minions .

A couple things happened.

  1. I went nutso and snatched a MinionsDVD/Blu-Ray off the shelves while my mom looked on in horror as I bounced around like a jumping bean.
  2. The kids went nutso and started doing acrobatics all over the shopping cart until we walked out of the store.
  3. I bought the movie – no brainer.
  4. We took it home and watched it. We watched the HECK of out of it, which is southern speak for we watched eleventyhundred times already!

The littles absolutely loved Illumination Entertainment’s Minions movie when we saw it in theaters this summer, and Grady especially is insanely obsessed with the little yellow dungaree-clad dudes. They walk around singing the ba-ba-ba-ba-na-na song all the time.

Except, of course, when they’re whining about how they’re not allowed to eat crumbly pork rindsin the car, then they’re just straight up whining.

I’ve been kind of under the weather for the past few months which basically translates to “Mommy doesn’t feel well and is too lazy to clean off the table so we’re eating in front of the TV tonight!” every night of the week. It also means that the food Mommydoes makehas to be quick and easy toput together, produce very little mess, be easy to eat, and be something my picky littles will munch on. When Mommy doesn’t feel well, the little gremlins really come out. It’s like they KNOW Mommy’s not going to be able to keep up with their antics, right? Kind of like those little minions.

One of my favorite go-to meals is taco salad, but I’m also a fan of cheesy dips, especially while watching a movie. We’re trying to limit our sugar consumption as a family so I’ve started feeding the kids a lot of pork rinds, which they love (Thank you baby Bacon), and we’ve begun using them as chips to dip into our cheesy dips since corn is out of the question.

What pairs better with pork rinds than a cheesy taco dip? Right, nothing. See? Even Pearl wants in on the action

This dip is so good it’s naughty. It’s so naughty it’s the minions next master! Cook the meat ahead of time so you can whip it together just before the movie comes on in order to enjoy while you laugh. Although I don’t recommend eating and laughing right at the same time. Taco dip coming out of your nose with chunks of pork rinds scattered here and there sounds about as nice as being poked in the eye by Scarlet Overkill’s nose. Ouch.

For a fun treat for the kids, use 1/2 cup of sour cream and 8 drops of blue food coloring to give the topping a little hint of blue – kind of like minions and their dungarees.

Taco Dip

Ingredients

Taco Meat

  • 1lb Ground Beef
  • 1 tablespoon Chili Powder
  • 1/4 teaspoon Garlic Powder
  • 1/4 teaspoon Onion Powder
  • 1/4 teaspoon Oregano
  • 1/4 teaspoon Crushed Red Pepper Flakes
  • 1/2 teaspoon Smoked Paprika
  • 1-1/2 teaspoon Ground Cumin
  • 1 teaspoon Sea Salt
  • 1/2 teaspoon White Pepper

Dip

  • 8oz Cream Cheese (Softened)
  • 2 cups Shredded Cheese (Cheddar works best here, or Mexican Blend if your store carries it)
  • 1/4 cup Heavy Cream
  • Taco meat

Directions

Taco Meat
Step 1

Mix spices for the Taco Meat together then dump all over your ground beef in a pan and cook on medium until thoroughly cooked, drain and set aside.

Dip
Step 2
Heat oven to 350*. Beat the heck out of the cream cheese until it is light and fluffy. Add heavy cream and shredded cheese and stir until combined.
Step 3
Place individual cook-safe ramekins or in a casserole dish and bake for 25 minutes or until dip is hot and bubbly.
Step 4
Serve with pork rinds for dipping and enjoy a fab movie while you munch away.
