New York Strip Roast Recipe (With Garlic and Herbs) - Cooking Frog (2024)

New York strip loin Roast beef for a holiday dinner or festive occasion is a straightforward and impressive meal that everyone will just love. I’ve made this recipe with an awesome blend of garlic and herbs, and the results are fantastic.

New York Strip Roast

The New York Strip Roast is a versatile cut that can be roasted, grilled, or pan-fried. When it’s cooked just right, it’s juicy and tender, and it just melts in your mouth. Rich, beefy, and slightly nutty, the taste makes it a favorite of steak lovers.

Oven-Baked

Roasting a New York strip roast in the oven is one of the best ways to cook it. With this method, the roast gets a beautiful crust on the outside while the inside stays juicy and tender. Add salt, pepper, and any other herbs and spices you like to the roast, and then put it in the oven at 450 F for 30 minutes or until it reaches 145 F internal temperature. Wait a few minutes before cutting it and serving it.

Grilling

Grilling a New York Strip Roast is another great way to cook it. This way of cooking the roast gives it a smoky flavor and a crispy outside. Add salt, pepper, and your favorite herbs and spices to the roast, and then grill it over medium-high heat for about 8 to 10 minutes per side. Wait a few minutes before cutting it and serving it.

There are numerous cuts to take into account, from a bit expensive tenderloin and standing rib to the cheaper rump roast. An entire strip loin, also known as New York strip roast or Kansas City strip, usually cut into steaks, also makes a good meal.

Tips for the best New York Strip Roast

My family has a one holiday tradition that is more important than any other: the famous Christmas Dinner feast. And as the group’s main cook, I take my job of making the main dish very seriously. And let me tell you, my delicious New York Strip Roast is always the star of the show.

But before you run to the kitchen, let me give you some pro tips. Quality is the most important thing. Folks, don’t compromise with the quality of the beef here. Buy the best organic New York Strip Loin you can find. If you’re planning ahead, you can even order it online.

And don’t forget the reliable meat thermometer! This is not up for discussion. Check the roast temperature in the thickest part to make sure it’s done right. Remember that the meat’s temperature will keep going up as it rests, so don’t cook it too long in the oven.

New York Strip Roast Recipe

Ingredients

  • 7 lb of New York Strip Roast
  • 8 garlic cloves
  • 2-3 Tbsp of fresh thyme leaves
  • 2-3 Tbsp of fresh rosemary leaves
  • 9 fresh sage leaves
  • 1/3 cup of extra virgin olive oil
  • 1 1/2 Tbsp of salt
  • 1 Tbsp of black pepper, cracked

Instructions

  • Place the herbs and garlic in a food processor. Pulse the ingredients together until they become a paste. If the mixture gets too thick, you can help things along by adding a bit of oil. Pulse the mixture until it is all finely chopped.
  • Once the mixture is chopped well, remove the blade and add the oil, salt, and pepper. Then, scrape it to make a nice paste.
  • Rub the paste all over the beef, making sure to cover the top, bottom, and sides well. Wrap the meat in butcher paper and make sure it is well sealed. Place the beef in the refrigerator overnight.
  • When it’s time to cook the beef, take it out of the fridge and let it sit on your kitchen counter for at least an hour. The beef should be at room temperature.
  • Position the beef on a roasting rack in a roasting pan.
  • Heat your oven to 450 F. The goal here is to blast the strip roast at a high temperature to give it a nice crust.
  • Then we’ll turn down the heat to 350F and keep cooking until the beef reaches the temperature you want. In my case, I like it medium rare, which is around 130 F.
  • Place the meat, fat side up, on a rack in a roasting pan—roast meat for 15 minutes.
  • Lower the oven temperature to 350°F. Roast meat until an instant-read thermometer inserted into the thickest part of the meat reads 130°F (for medium-rare) or 140°F (for medium, about 40 minutes).
  • Remove from oven; let stand for 15-20 minutes.
  • After the beef has rested, put it on a cutting board and slice the strip roast to your desired thickness.
  • Enjoy!

Perhaps New York strip, technically a strip loin roast, makes the best roast of the three. While it has less marbling than a rib roast, it has more than the tenderloin. I might argue that the strip loin roast has the most flavor.

Do you cook roast beef covered or uncovered? ›

Remember to reduce the temperature after 20 minutes and deduct the 20 minutes from the total cooking time - leave the oven door open for a couple of minutes to help it cool down. There's no need to cover your beef while it cooks; you want to get a good crust on the outside and foil won't help with this.

Rule of thumb is about 45 minutes to an hour per pound at 350 degrees F. However, this recipe is cooked a bit slower at 325 degrees, so you'll need about 3 ½ hours. Roasting the meat at a lower temperature makes it a bit more tender for the perfect pot roast.

The sous-vide temperature should be 130 – 134°F (55 – 57°C). The minimum cook time to sous-vide bottom round roast or rump roast is 24 – 48 hours. I would recommend 24 hours, to get an even more tender roast.

If a roast of beef is important to your holiday gathering, but you just can't get behind paying $150+ for a prime rib, we'd like to recommend that you try a roasted eye of round. This economy cut has all the beefy flavor that you want, but at a fraction of the price of prime rib.

The major difference between it and a tenderloin, such as a filet mignon, is that the New York Strip comes with a strip of fat along one edge of the cut. You'll also find fat marbling throughout the steak.
